Valentine Brownie Cake

13 Feb

1/2 cup all purpose flour

1/2 tsp salt

1/2 tsp baking soda

4 tbsp cocoa powder

6 oz. semi-sweet chocolate chips

6 tbsp unsalted butter

1 cup sugar

2 whole eggs plus 2 yolks

Pre-heat over to 350 degrees. Line a cake pan with greased aluminum foil, leaving the sides longer than the pan to lift the cake more easily. In a small bowl whisk flour, salt, baking soda and cocoa. Set aside.

Place chocolate and butter in a double boiler over simmering water. Remove when just melted. Whisk in the sugar and eggs. Whisk in the flour mixture to combine. Transfer to the prepared pan.

Bake for 30-35 minutes. Use a cake tester to make sure the cake is ready. Let cool for ten minutes.

Use heart-shaped cookie cutters for individual servings if you like. Good vanilla ice cream or heavy cream, whipped, is a good match. Or a dusting of powdered sugar to keep things simple.

This is perfect for Valentine’s Day!
